INGREDIENTS
2 Tablespoons of Olive Oil
1 finely chopped Onion
300 gram coarsely grated Sweet Potato
2 crushed Garlic cloves
4 Eggs
2 Egg whites
1/4 cup plain flour
1/2 cup fresh ricotta
2 Tbs Chives
2 Tbs Parsley
8-10 Cherry Tomatoes
METHOD

Add oil to hot pan

Add chopped onion to the pan and saute to golden

Add garlic
-
In a bowl, add 4 eggs and 2 egg whites

Add flour slowly and whisk mixture until there are no lumps

Add ricotta and then whisk
-
Fold in the sweet potato and onion mix plus grated zucchini
-
Add chives and parsley
-
Pinch of salt
-
Pepper to taste

Stir the mixture and then add to a greased and lined lamington tray 26cm by 16cm

Bake for 25-30 minutes at 180o C

Top with cherry tomatoes and serve
