My version of rice crispy treats are perfect for a quick pick me up or a sweet snack after dinner. I’ve always loved the crispy rice cereal that would traditionally be included in these but by combining puffed rice and quinoa, it adds an extra kick of health while still keeping the delicious texture. Nut butter and sweet dates help to bind this together in replacement of marshmallows and butter that are traditionally used. These are vegan, gluten free, can be made nut free and are just the perfect little slice!

INGREDIENTS
BASE
1/2 cup Organic Quinoa, White
1 cup Organic RAW Pitted Dates soaked in hot water for 5 minutes
1/2 cup Almond Butter in Conversion to Organic or other nut or seed butter
1/2 tsp Salt
1 tsp Vanilla Extract
4 cups Puffed Rice
TOPPING
1/4 cup Organic Coconut Oil, Virgin Cold-Pressed
1/4 cup Organic RAW Cacao Powder
3 tbsp Organic Maple Syrup
METHOD
If you are short on time, use Ceres Organics Quinoa Puffs instead. Heat a small pot or pan on med-high heat. Add your quinoa and spread evenly.
Stir your quinoa constantly with a wooden spoon or spatula until it begins to pop.
Reduce your heat to low and continue to allow it to pop until popping begins to slow. Remove from heat and set aside.
In a food processor blend your dates, nut/seed butter, salt and vanilla until it forms a firm dough-like mixture.
Place your date mixture into a large bowl and add in 2 cups of puffed rice.
Mix until combined, you may need to use your hands!
Add remaining rice and puffed quinoa. Mix until combined.
Place this mixture into a slice tin and press firmly with wet hands or the bottom of a cup. Place in the fridge whilst you make the topping.
In a small bowl combine your melted coconut oil and cacao powder. Mix to combine before then adding maple syrup.
Pour this chocolate over your base mixture and spread evenly.
Allow the slice to set in the fridge until the chocolate is set for about 20 minutes.
Slice into desired shape and size. Dust with cacao powder, serve and enjoy.
Store in the fridge in an airtight container.
