Another Hello Fresh meal and one of my favourites! Easy to cook and so tasty! I loved the twist on teriyaki sauce featuring a teriyaki sauce, rice wine vinegar and soy made it extra nice. The garlic aioli on the cabbage and carrot slaw was a nice touch, as was the pickled cucumber. Delicious! If you’re gluten intolerant I recommend the gluten-free corn tortillas from Woolworths.
Quick Teriyaki Pork Tacos with Sesame Slaw & Pickled Cucumber

Ingredients
- 1 cucumber
- 1 bunch spring onion
- 2 clove garlic
- 1 carrot
- ½ packet teriyaki sauce (Contains Gluten, Sesame, Soy)
- 1 packet pork mince
- 1 packet garlic aioli (ContainsEgg)
- 1 bag shredded cabbage mix
- 1 packet mixed sesame seeds
- (Contains Sesame. May be present Gluten, Milk, Tree Nuts, Peanuts, Soy)
- 6 mini flour tortillas (Contains Gluten, Soy. May be present Milk, Soy)
- 1 packet crushed peanuts
- Not included in the delivery
- 1 olive oil
- 2 tsp soy sauce (ContainsGluten, Soy) or a gluten-free tamari sauce
- 1 tsp brown sugar (May be present Gluten, Milk, Tree Nuts, Peanuts, Sesame, Soy)
- ¼ cup rice wine vinegar (for the pickle)
Instructions
- Thinly slice cucumber into rounds. • In a medium bowl, combine vinegar (for the pickle) and a good pinch of sugar and salt. Add cucumber and just enough water to cover cucumber. Set aside. • Finely chop garlic. Grate carrot. Slice spring onion • In a small bowl, combine teriyaki sauce (see ingredients), soy sauce, rice wine vinegar (for the sauce) and brown sugar. Season with pepper. TIP: Slicing the cucumber very thinly helps it pickle faster!
- • In a large frying pan, heat a drizzle of olive oil over a high heat. • Add pork mince and cook, breaking up with a spoon, until browned, 4-5 minutes. • Add garlic and cook until fragrant, 1 minute. Add teriyaki mixture and cook, stirring, until sauce is slightly reduced, 1 minute. Remove from heat.
- • In a large bowl, combine garlic aioli, shredded cabbage mix, spring onion, carrot and mixed sesame seeds. Season to taste. • Microwave mini flour tortillas on a plate for 10 second bursts, or until warmed through.
- • Drain pickled cucumber. • Fill each tortilla with a helping of sesame slaw, teriyaki pork and pickled cucumber. • Sprinkle with crushed peanuts to serve.
