Read on for an amazing recipe that tastes amazing and is a great way to sneak in vegetables that your children and family won't know is there. Sneaky and delicious! "These brownies are addicting and so good. They’re gooey, fudgy, and super chocolaty…andthey have zucchini in them. So they’re healthy brownies. Practically a vegetable. I promise you though – NO ONE will guess there is zucchini in this homemade brownies recipe. They taste like the most decadent brownies ever…and it just so happens they’re a vegetable. #You’reWelcome. When you make the recipe you’re going to think something is strange, because there are no eggs in it. Yes, that’s right, a brownie without eggs. Also, there’s no butter in the brownies, so if you skip the frosting these are vegan brownies. Now you pretty much know the secret to the ooey gooey chocolate frosting. It’s cocoa, melted butter, milk, salt, and vanilla. No mixer even needed, just use a whisk! Pour it over the cooled brownies and let it semi-set. This frosting stays gooey and wet with a teeny hardening on the top."

Ingredients

  • For the brownies:
  • 2 cups all-purpose flour
  • 1/2 cup cocoa powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 1/2 cup vegetable oil
  • 1 1/2 cups sugar
  • 2 teaspoons vanilla extract
  • 2 cups shredded zucchini 1 large or 2 small zucchinis
  • 3-5 tablespoons water
  • 1/2 cup chopped walnuts optional
  • For the frosting:
  • 3 tablespoons cocoa powder
  • 1/4 cup butter melted
  • 2 cups powdered sugar
  • 1/4 cup milk
  • 1 tablespoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F. Line a 9×13″ baking pan with foil and spray with cooking spray. Set aside.
  2. In a medium bowl, whisk together flour, cocoa, baking soda, and salt. Set aside.
  3. Using an electric mixer fitted with a paddle attachment, mix together the oil, sugar, and vanilla until well combined. Add the dry ingredients and stir.
  4. Fold in the zucchini. Let the mixture sit for a few minutes so the batter can absorb the moisture from the zucchini.
  5. Then, if your mixture is still very powdery, add up to 5 tablespoons water (start with 1 tablespoon and work up from there, stirring well after each addition). The batter will be very thick but shouldn’t be powdery. (It partially depends on how wet your zucchini is!)
  6. Add walnuts, if desired. You may need to use your hands to work the water in instead of a spoon. The dough is super thick, like cookie dough. Do not add too much water! Spread in prepared pan.
  7. Bake 25-30 minutes until the brownies spring back when gently touched.
  8. To make the frosting: Whisk butter, cocoa, salt, and powdered sugar. Whisk in milk and vanilla. Spread over cooled brownies.
  9. Cut into squares and chill to semi-set. The frosting hardens slightly on the top but stays wet and gooey underneath.
  10. These brownies are best stored in an airtight container and eaten within 2 days. Chill them to make them last an extra day. They’re what I call “fork” brownies because they are so gooey.

Recipe: Homemade Pumpkin Gnocchi

Recipe: Homemade Pumpkin Gnocchi

Ingredients

  • 1kg Sebago potatoes
  • 400g pumpkin, finely grated
  • 2 eggs
  • 400g White Wings GF Flour
  • Extra White Wings GF Flour for dusting
  • Serves 4 people

Instructions

  1. Place potatoes in a saucepan of salted water, cover and bring to the boil. Reduce heat and simmer covered until cooked when tested.
  2. Drain potatoes, peel and place in a large bowl, mash until smooth.
  3. Add grated pumpkin and eggs to potatoes and mix thoroughly.
  4. Add flour to the mixture a little at a time and work with hands until dough consistency
  5. Dust bench with extra flour, turn pumpkin mixture out and gently knead until smooth
  6. Roll into a large sausage shape and divide into 8 pieces.
  7. Dust bench again and roll out each piece approx 1cm in diameter and cut into 2cm lengths.
  8. Roll pieces on gnocchi board (or gently press over the back of a fork)
  9. Cook gnocchi in rapidly boiling salted water with a splash of olive oil.
  10. Once gnocchi floats to the top of the saucepan, cook further one minute, drain and serve immediately with your favourite sauce. Enjoy!

Notes

You could substitute sweet potato for the potato to make it even more healthy.

Recipe: Easy Zucchini Pickles

Ingredients

  • 3kg zucchini ~ firm and unblemished
  • 5 small brown onions ~ peeled
  • 1 cup of salt
  • 1 litre of white wine vinegar
  • 2 cups of caster sugar
  • 1/2 cup of dijion mustard
  • 1/4 cup of yellow mustard seeds
  • 1/8 cup of tumeric powder
  • 2 Tbsp cumin powder
  • 1 Tbsp freshly ground black pepper
  • 1/2 Tbsp paprika
  • 1 Tbsp garlic powder
  • 1 Tbsp onion powder
  • 1 Tbsp dried parsley
  • 1 Tbsp dried coriander leaf

Instructions

  1. Top and tail the zucchini and slice them thinly lengthwise on the mandolin into a large non-reactive bowl. Do the same with the onions, mixing them together with the zucchini.
  2. Pour the cup of salt over the sliced vegetables and leave them covered with a clean tea towel for an hour.
  3. Rinse the vegetables well under cold running water to remove the excess salt and moisture. Allow the vegetables to sit in a colander for further 30 minutes to properly drain or shake the vegetables gently in loose hands to shake off any excess moisture.
  4. Place the mustard seeds in a saute pan and place over a medium heat and gently heat. Once the seeds pop, remove them from the heat and crush lightly with a rolling pin.
  5. In a stainless steel, pot bring whisk together the vinegar, sugar, mustard and toasted crushed mustard seeds. Allow to come to the boil and then reduce down to a simmer.
  6. Mix together the turmeric, cumin, black pepper, paprika, garlic and onion powder with 1/4 cup of boiling water and whisk into the vinegar mixture. Simmer for a further couple of minutes and then remove from the heat and whisk in the parsley and coriander leaf.
  7. Pour this mixture over the zucchini and onions and allow to steep for 30 minutes before bottling in sterilized jars.
  8. These zucchini pickles should be eaten within three months of bottling and once the jar is opened, please remember to refrigerate.

Notes

This recipe is made all the more easier thanks to a little kitchen gadget - a Benriner Japanese mandolin slicer. If you plan on making a lot of zucchini pickles I would strongly recommend you get yourself one, as this will not only make the job of creating your zucchini pickles a lot more enjoyable but it will also give you consistency in the overall outcome of the dish. If you don’t have access to a benriner, then other kitchen madolin slicers will be able to do the job just as efficiently.

  • Tandoori chicken
  • 6 chicken breasts, skin removed
  • 250ml natural yoghurt, drained.
  • 100g tandoori paste
  • 1 lemon, zest and juice
  • Tandoori paste from scratch
  • Ingredients
  • 1/2 knob ginger, grated
  • 4 cloves garlic, chopped
  • 4 red chillies, chopped
  • 4 tsp turmeric, ground
  • 2 tsp cardamom, ground
  • 4 whole cloves
  • 1 tsp black pepper corns
  • 1 tsp cinnamon, ground
  • 1 tsp coriander, ground
  • 1 tsp cumin seeds
  • 1/2 cup vinegar

Instructions

  1. In a mixing bowl combine the yoghurt, tandoori paste and lemon juice.
  2. Mix into a smooth paste, add the chicken pieces and marinate for a minimum of 2-3 hours or overnight if possible.
  3. Place marinated chicken on to a greased baking tray and cook in an oven set at 180C for 25-30 minutes or until cooked.
  4. Serve with some cooked basmati rice studded with peas and sultanas.
  5. Tandoori Paste Method
  6. Place all the ingredients in a food processor and pulse for 20-30 seconds, or until it reaches a smooth paste like consistency.
  7. Place into a clean container and may be kept in the fridge for up to a month.
  8. This may then be used as you would a commercial equivalent.
